Osso Buco

Description

Osso buco is a crosscut of  a beef shank that when cooked slowly is incredibly rich in flavour and soft in texture. When prepared hours ahead, the meat will slide off the centre-cut marrow bone it’s attached to.

Osso buco is a traditional Italian dish, perfect for the wintery months. It’s often argued that osso buco tastes even better when prepared as a leftover the day after as it soaks further in the sauce it’s cooked in.
